Our Favorite Pot Luck Recipes


Apple Raisin Spice Cake

3 cups unsifted flour                            1 1/2 tsp. ground cinnamon
2 cups sugar                                        1/2 tsp. ground nutmeg
1 cup mayonnaise                               1/2 tsp. salt
1/3 cup milk                                          1/4 tsp. ground cloves
2 eggs                                                   3 cups chopped peeled apples
2 tsp. baking soda                               1 cup raisins
1/2 cup coarsely chopped walnuts

Grease and flour a 9 x 13 baking pan. In large bowl mix the first 10
ingredients Add apples, raisins and nuts. Spoon batter into pan. Bake in 350
degree oven for 45 minutes or until toothpick inserted in center comes out
clean..  Cool in pan.
Frost with your favorite frosting or cool whip goes good on it also.

Pastor Paul's Favorite Wet Burritos

 Ingredients

Filling:

1 lb ground beef, browned

1 cup cottage cheese

1 32 oz can refried beans

1 small can chilies

1 1/2 cup shredded cheddar cheese

1 pkg burrito sized flour tortillas  

 

Sauce:  (assembles very quickly)

2 T cooking oil

2 T chili powder

3 T flour

3 cups water

2 t. vinegar

2 t. minced garlic

1 t. onion powder

1 t. salt

1 t. oregano

To make sauce:  heat oil, chili powder and flour in a small saucepan to make a paste.  Add water gradually to make a smooth sauce; add remaining ingredients and bring to a boil.  Lower heat and simmer while assembling the burritos.

Directions:

Preheat oven 350 degrees.  Make sauce.  In a large bowl mix ground beef, cottage cheese, chilies and 2/3 of the cheddar cheese.  Spoon 2 or 3 Tablespoons of mixture into each tortilla, roll and place in a rectangular 2x9x13 pan. Pour sauce over burritos.  Top with remaining cheese and bake uncovered for 45-50 minutes or until bubbly.

 


 

Panuchi Squares

 
2 cups brown sugar
1/2 cup melted butter
2 eggs
2 tsp. vanilla
1 tsp. baking powder
2 cups flour
1/2 tsp. salt
1 12oz. bag choc. chips
 
Mix brown sugar and melted butter, add eggs and vanilla.   Add flour, baking powder and salt.   Then mix in choc. chips.   Pour mixture in a 9 x 12 greased pan. Bake at 350 degrees for approximately 20 min. or when toothpick comes out clean.   That's it, Enjoy

Butter Pecan-Peach Cake 

29 oz. can sliced peaches, un-drained

18 1/4 ox. package butter pecan or yellow cake mix

1/2 C. butter, melted

1 C. chopped pecans

1 c. flaked coconut 

In the bottom of an un-greased 13 X 9 in baking pan, pour in peaches & syrup.  cover with dry cake mix.  Drizzle butter over the top.  Sprinkle with pecans and coconut.  Bake uncovered at 350 degrees for 30 to 35 minutes
